Summer classes started on Monday, and I am pleased to see students diving head first into their academics. This summer we are running Physical Education, Grade 11 and 12 English, Chemistry, Photography, and two sections of Italian.
Healthy minds require healthy eating. As part of our students’ cultural immersion, cuisine at CCI focusses on distinctive Italian regional dishes. Speranza’s recipes are fiercely traditional and feature fresh seasonal ingredients.
Wednesdays are Pizza Nights at CCI. Preparation starts the day before, when Chef Speranza makes the dough, which needs to sit for at least 24 hours to give it time to rise.
A few hours before dinner, she fires up the wood oven to bring it to just the right temperature. She, and our pizzaiolo Fernadno, then prepare the pizzas right in front of us.
