Cooking is central to Italian culture, reflecting its regional diversity, history, and traditions. Summer students have been learning this with Chef Speranza and Corrado who treat us to wonderful meals each day.
Outside of our meals at the Allegria, students have had the opportunity to explore local restaurants on weekends and on trips.
But to further deepen our understanding of Italian cuisine, we brought our students to ReD Academy, a professional cooking school in Lanciano. There, Chef Christopher demonstrated how to make pallotte cacio e ovo, which are fried cheese balls made with parmigiano and pecorino cheese, bread crumbs, and egg, in a simple tomato sauce.
Of course, we also got to taste them!!!
A very special thanks to Franceso for translating the entire demo for the third summer in a row! Grazie!
